Have all ingredients prepped and ready — stir-frying is fast and waits for no one.
5 min
Cook shrimp and pork
On highest heat, stir-fry shrimp until pink. Add diced char siu pork. Remove everything.
3 min
Scramble the eggs
Add a little more oil, crack in eggs, and scramble until just set but still slightly wet. Remove.
2 min
Fry the rice
Add oil and the cold rice. Press and spread with a spatula, let it sit 30 seconds to crisp, then toss. Repeat. The rice should be bouncing and slightly toasted.
4 min
Combine and season
Return all cooked items to the wok. Add peas, soy sauce, and sesame oil. Toss everything together over high heat for 1 minute. Finish with green onions.

Cooking Tips
DAY-OLD rice is non-negotiable. Fresh rice is too wet and will clump. Spread cooked rice on a tray and refrigerate uncovered overnight to dry it out.
