  1. Whisk the custard

    In a shallow bowl, whisk the eggs, milk, sugar and vanilla until smooth.

  2. Soak the bread

    Dip baguette slices into the custard for about 20–30 seconds per side. The middle should absorb liquid without the bread collapsing.

  3. Cook in batches

    Melt half the butter in a large frying pan over medium heat. Add half the bread and cook for 3–4 minutes per side until golden and the custard in the centre is set.

  4. Finish and serve

    Repeat with the remaining butter and bread. Dust lightly with icing sugar and serve warm.
