Golden tofu pieces simmer in a soft tomato sauce with garlic and spring onion. This Vietnamese-style version uses soy sauce in place of fish sauce.

  1. Dry and cut the tofu

    Pat tofu dry with a clean towel. Cut into 3 cm pieces, taking care to remove surface moisture so it browns rather than steams.

  2. Pan-fry

    Heat 2 tablespoons oil in a nonstick pan over medium-high heat. Cook tofu for 8–10 minutes, turning until golden on several sides. Transfer to a plate.

  3. Cook the tomatoes

    Add remaining oil to the pan. Soften the spring onion whites and garlic for 30 seconds. Add tomatoes, soy sauce, sugar, salt and water. Simmer for 8 minutes.

  4. Simmer together

    Return tofu to the pan. Turn gently in the sauce and simmer for 5 minutes, until the sauce clings to the pieces.

  5. Finish

    Add spring onion greens and black pepper. Taste and serve with freshly cooked rice.

Cooking Tips

Use plain unfilled tofu; some similarly named dishes contain pork-stuffed tofu.
