  1. Brown the eggplant

    Heat 3 tablespoons olive oil in a wide pan. Cook eggplant in batches for 10–12 minutes, turning until browned and tender. Set aside.

  2. Soften the vegetables

    Add remaining oil, onion and celery to the pan. Cook for 7 minutes over medium heat.

  3. Simmer the sauce

    Add tomatoes, olives, capers, vinegar, sugar, salt and pepper. Simmer for 10 minutes until slightly reduced.

  4. Bring together

    Return eggplant and fold gently into the sauce. Cook for another 5 minutes, adding a small splash of water only if needed.

  5. Rest and serve

    Remove from the heat and tear in basil. Let stand for 10 minutes so the sweet-and-sour flavours settle before serving.
