  1. Combine the vegetables

    Put eggplant, tomatoes, garlic, olive oil, cumin, paprika, chilli, salt and water in a wide saucepan.

  2. Cook covered

    Bring to a simmer, cover and cook over medium-low heat for 20–25 minutes. Stir several times, adding a splash of water if it catches.

  3. Mash and reduce

    When the eggplant is very soft, mash the mixture roughly with a fork or potato masher. Cook uncovered for 8–10 minutes until thick.

  4. Finish with herbs

    Stir in parsley, coriander and lemon juice. Taste, then serve with bread or as a side dish.
