  1. Cook the onion

    Heat oil in a wide lidded pan. Add cumin for 30 seconds, then onion. Cook for 5 minutes until softened.

  2. Make the masala

    Add garlic and ginger for a minute. Add tomatoes, ground coriander, turmeric, chilli powder and salt. Cook for 5 minutes.

  3. Start the potatoes

    Stir in potatoes and water. Cover and cook over medium-low heat for 8 minutes, turning once.

  4. Add cauliflower

    Fold in cauliflower, cover and cook for 10–12 minutes until both vegetables are tender. Add a little water only if the pan begins to catch.

  5. Dry and season

    Uncover and cook for 2–3 minutes to evaporate excess moisture. Add garam masala, lemon juice and coriander. Turn gently and serve.

Cooking Tips

Cut the potatoes smaller than the cauliflower florets so they finish cooking together.
