  1. Start the spice base

    Heat oil over medium heat. Add cumin for 30 seconds, then onion. Cook for 8 minutes until golden, stirring regularly.

  2. Cook the tomatoes

    Add garlic, ginger and chilli for a minute. Stir in ground coriander and turmeric, then tomatoes and salt. Cook for 8 minutes until thick.

  3. Simmer the chickpeas

    Add chickpeas and water. Bring to a gentle simmer and cook uncovered for 12–15 minutes, stirring occasionally.

  4. Thicken and finish

    Mash a few chickpeas against the side of the pan. Stir in garam masala and lemon juice. Scatter with coriander leaves and serve.
