  1. Prepare the spinach

    Wash the spinach. Wilt in a covered pan with a splash of the measured water for 2–3 minutes. Cool briefly, then blend with the remaining water.

  2. Cook the aromatics

    Heat oil in a saucepan over medium heat. Add cumin for 30 seconds, then onion. Cook for 6–8 minutes until soft and lightly golden.

  3. Build the sauce

    Add garlic, ginger and chilli; stir for a minute. Add tomato, turmeric and salt. Cook for 5 minutes until the tomato breaks down.

  4. Add spinach and paneer

    Stir in the spinach purée and garam masala. Add paneer and simmer gently for 5 minutes, stirring carefully to avoid breaking the cubes.

  5. Finish gently

    Stir in cream and heat for another minute without a hard boil. Taste and serve with rice or flatbread.
