  1. Soften the sauce ingredients

    Heat 1 tablespoon oil in a pan. Cook onion for 6 minutes. Add garlic and ginger for a minute, followed by tomatoes and cashews. Simmer for 8 minutes.

  2. Blend carefully

    Allow the mixture to cool slightly. Blend with half the water until smooth, following the blender instructions for warm liquids.

  3. Bloom the spices

    Heat the remaining oil in the pan. Add cumin for 30 seconds, then coriander, turmeric and chilli powder. Stir briefly and pour in the sauce.

  4. Simmer the peas

    Add the remaining water and salt. Bring to a gentle simmer, add peas and cook for 5 minutes.

  5. Warm the paneer

    Add paneer and garam masala. Simmer for 4–5 minutes, then stir in cream. Add a small splash of water if the sauce is too thick.
