  1. Cut the vegetables

    Cut tomatoes into wedges, cucumber into thick half-moons and the seeded pepper into thin strips. Slice the onion finely.

  2. Mix the dressing

    Whisk the olive oil with vinegar, half the oregano, salt and pepper in a large bowl.

  3. Toss gently

    Add the vegetables and olives. Turn gently so the tomato wedges stay intact while picking up the dressing.

  4. Finish with feta

    Transfer to a shallow dish. Place the feta on top in slabs or large pieces and sprinkle with the remaining oregano. Serve straight away.
