Roughly smashed cucumbers catch a tangy garlic dressing in every edge. Soy sauce, rice vinegar and sesame oil make a crisp companion to noodles or rice.

4 stepsSmash and cut
Wash cucumbers and trim the ends. Lay a cucumber on a board and press gently with the flat side of a broad knife until it cracks. Cut into bite-sized pieces; repeat.
Drain briefly
Toss cucumber with salt in a colander. Leave for 10 minutes, then drain and pat lightly to remove excess moisture.
Make the dressing
Mix garlic, soy sauce, rice vinegar, sugar, sesame oil and chilli oil in a serving bowl until the sugar dissolves.
Toss and finish
Add cucumber and toss well. Sprinkle with sesame seeds and serve immediately for the crispest texture.
Ingredient Notes
Choose chilli oil made only with plant ingredients; some chilli crisps contain shrimp or beef.
Cooking Tips
Draining the cucumber first keeps the dressing from becoming diluted.
